Learning Japanese Culinary Culture

Seminars and workshops devoted to learning Japanese culinary culture, including pastry and tea, will be organized for various audiences: from professional chefs and students interested in becoming cooks to the general public and children. The charms of Japanese cuisine will be presented in a way that combines both theory and practice.

1. Children’s Workshops
Three introductory workshops using products available in France and a choice of dishes that are easy to prepare and fun for children.

2. Professional Workshops
Intended for students from vocational cooking schools and future chefs, lectures and practical courses given by specialists in Japanese cuisine will be organized. “Katsuobushi, dashi, umami,” “ikejime fish preparation technique,” “sharpening and using kataba knives” and “Sumibiyaki.” These are the topics that will be studied, taking into account how such techniques can be applied to French cuisine. Six sessions have been planned in Paris, Clichy, Tours, Strasbourg and Toulouse.

3. Japanese Tea Workshops
Mainly intended for cooking professionals and specialists, these workshops combine theory and practice to teach participants about the charms and ways of enjoying Japanese tea. Lectures relating to the history of Japanese tea, its regions of production, varieties, utensils, health benefits, etc., including comparative tastings by region, varieties and utensils used.
Special for sommeliers: cocktails and amuse-bouches using Japanese tea. For pastry chefs and students of pastry schools: suggestions for matching French pastry and tea, ideas for confectionery made with Japanese tea, etc.
